Pie Recipes.


Mince & Onion Pies.

About 1lb (454 grams) of minced steak together with roughly chopped onions (3 or 4 to taste depending on size - just what looks right. Cook it in the microwave, with a little water, at 600W for 20 minutes. Stir and then cook for another 20 minutes. Add three (or more to taste) Oxo cubes, stir and cook for a final 20 minutes. Thicken the gravy as necessary with arrowroot.
The pastry is standard shortcrust. Cook for about half an hour at 200 deg C (fan oven)
This makes 8 pies in the oval foil dishes we used (CH19 Oval Aluminium Container 5.25" long).

Steak & Gravy Pies.

About 2.2lb (1 Kg) of diced stewing steak. Cook it in a slow cooker, with sufficient water to leave enough for the gravy, until tender and fallen apart. Add three (or more to taste) Oxo cubes part way through Thicken the gravy as necessary with arrowroot.
The pastry is standard shortcrust. Cook for about half an hour at 200 deg C (fan oven)
This makes 10 pies in the foil dishes we used (CH120E Oblong Aluminium Container - 5" Rectangle).

Pork & Bacon Pies.

Start with 700g of pork shoulder steaks and about 1/3 kilo of cooking bacon (rinsed as necessary to remove excess saltiness). Trim most of the fat off and put it out for the birds to eat. Mince the meats (not too fine) and mix together with three (or more) vegetable Oxo cubes and ground black pepper to taste.
The pastry is standard hot water crust. Cook for about 20 minutes at 200 deg C (fan oven), reduce temperature to 180 and cook for another 75 to 90 minutes until they look done.
When cool (if desired) add jelly by making up a gelatine mixture with an extra vegetable Oxo cube.
This makes 7 pies in Lakeland oval foil dishes.
